Pork Loin Roast For Four:
Preheat oven to 500°. Rub roast with herbs and seasonings. Place in a roasting pan with fat side up and cook for 20 minutes. Reduce heat to 350° and cook for 30–40 minutes or until internal temperature is 160°. Continually baste roast with excess pork juices while cooking to maintain moistness.
Cinnamon Applesauce For Four:
Peel and core apples, then cut into medium-sized pieces. Add apples and cinnamon stick to sugar and water and bring to a boil. Reduce to a simmer for 15–20 minutes or until apples are very soft. Remove cinnamon stick and process apples through a food mill. Then return to stove and simmer for another 5 minutes, adding water to desired consistency.
Herb Roasted Potatoes For Four:
Preheat oven to 350°. Quarter potatoes lengthwise. Combine oil and herbs in mixing bowl and rub potatoes until evenly coated. Bake for 45 minutes or until soft when pierced with fork.
