Pork Chop Skillet Dinner

Ingredients

4 pork chops
1 tablespoon shortening
4 tablespoons rice, uncooked
4 slices onions
4 slices green bell peppers
1 (16-ounce) can tomato
1 teaspoon salt
1/2 teaspoon pepper

Directions:

Brown chops in medium skillet in heated shortening. Pour off excess fat. On each chop, place a tablespoon of rice, a slice of onion and green pepper, and a portion of tomatoes. Add seasonings and cover with liquid from tomatoes. Cover. Cook over low heat until chops are tender, about 1 hour.
