Padre Kino’s Favorite Meatloaf

Serves: 10

2 cups chopped onions
2 tablespoons oil
2 pounds extra lean, double ground beef
1 pound lean chorizo sausage
1 cup seasoned bread crumbs (Italian)
1/2 cup beef bouillon
2 eggs, lightly beaten
2/3 cup grated Cheddar cheese
1 teaspoon pepper
1 tablespoon salt
2 teaspoons thyme
2 teaspoons paprika
1 teaspoon allspice
1 teaspoon crushed, dried oregano


Preheat oven to 350°. Sauté onions in oil. Mix with other ingredients well. Shape into a loaf (not too high) and bake in a large pan at 350° for 1 1/2 hours. If your oven runs hot, shape a tin foil tent over it to keep it moist.

Fun Fact: Shiprock, the most prominent landmark in northwestern New Mexico (near Four Corners, USA,) is a towering rock formation rising an impressive 1,700 feet from the plain. The peak and surrounding land are of great religious and historical significance to the Navajo people. Climbing Shiprock has been illegal since 1970.
