Fiesta Salsa

Ingredients

4 fresh tomatoes, chopped
2 fresh green chilies, finely chopped, or 1 (4-ounce) can chopped green chiles
1 large Bermuda onion, chopped
1 green bell pepper, chopped
1 tablespoon sugar
1 tablespoon red wine vinegar
1 teaspoon olive oil
salt and pepper to taste
2 tablespoons chopped fresh cilantro
1/4 teaspoon oregano

Directions:

Mix all ingredients and refrigerate.


Fun Fact: Though many people picture New Mexico as desert terrain, one-fourth of the state is actually filled with forests. In fact, New Mexico has seven National Forests including one of the nation’s largest, the 3.3 million acre Gila National Forest and Wilderness. Terrain ranges from rugged mountains and deep canyons to semi-desert. Due to the extremely rugged terrain, the area is largely unspoiled. There are several hot springs in Gila National Forest, including Middle Fork Hot Springs, Jordan Hot Springs, and Turkey Creek Hot Springs. Gila contains more publicly owned land than any other national forest outside of Alaska.
