Colorful Black Bean Salad

2 (15-ounce) cans black beans, drained, rinsed
1 (11-ounce) can corn kernels, drained
1 medium red bell pepper, chopped
1 bun green onions, chopped
1/4 cup chopped red onion
3 cloves garlic, minced
2 teaspoons chopped fresh basil
1 1/2 teaspoons salt
1 teaspoon sugar
1 teaspoon pepper
1/3 cup red wine vinegar
1/4 cup light olive oil
5 - 6 red or green bell peppers or tomatoes, halved, seeded


Combine the black beans, corn, red pepper, green onions, red onion, garlic, and basil in a bowl; mix well. Combine the salt, sugar, pepper, wine vinegar, and olive oil in a small bowl. Whisk until well mixed. Pour over the black bean mixture; toss to mix well. Spoon into the bell peppers or tomatoes. Serve immediately.
