Chicken Breast with Cranberry Orange Sauce

Ingredients

2 large onions, sliced 1/2-inch thick
6 boneless, skinless chicken breast halves
1/4 cup frozen orange juice concentrate, thawed, but not diluted
1/4 cup water

Cranberry-Orange Sauce:
1 (16-ounce) can whole cranberry sauce
3/4 cup unsweetened orange juice
1 teaspoon grated orange rind
2 tablespoons brown sugar
2 teaspoons cornstarch
orange slices, for garnish

Directions:

Place onion slices in bottom of ungreased 9x13x2-inch baking dish. Top with chicken. Mix orange juice concentrate and water in bowl. Baste breasts with orange juice mixture. Bake one hour at 350°, until cooked through and browned. Baste occasionally with orange juice mixture. When chicken is done, transfer to serving plates. Discard onions. Spoon Cranberry-Orange Sauce over chicken. Garnish with orange slices and serve.

Cranberry-Orange Sauce:
Combine all sauce ingredients in small saucepan; stir well. Bring to a boil over high heat, stirring constantly. Reduce heat to medium, and cook one minute, stirring until thickened. Serve warm.


Fun Fact: William Frederick Cody, better known as Buffalo Bill Cody, founded "Buffalo Bill’s Wild West" in 1883 in the area of North Platte, Nebraska. The circus-like attraction toured annually. Buffalo Bill and his performers would reenact the riding of the Pony Express, Indian attacks on wagon trains, and stagecoach robberies. The show typically ended with a melodramatic reenactment of Custer’s Last Stand in which Cody himself portrayed General Custer. In 1895, Cody was instrumental in the founding of Cody, the seat of Park County in northwestern Wyoming. Cody opened the Irma Hotel in downtown Cody in November 1902, a hotel named after his daughter that is now on the National Register of Historic Places.
