Rustic Potatoes

Ingredients

12 potatoes, peeled and cubed
1 cup mayonnaise
1 onion, diced
1/2 cup green pepper, diced
3/4 pound shredded sharp Cheddar cheese
salt and pepper to taste
1/2 pound bacon, crisply cooked and crumbled
1/2 cup green olives, chopped

Directions:

Cover potatoes with water in a saucepan; boil for 10 minutes, until partially cooked through. Drain. Combine potatoes, mayonnaise, onion, green pepper, cheese, salt and pepper in a large bowl; mix well. Place in a greased 13"x9" baking pan; top with bacon and olives. Bake at 325 degrees, uncovered, for one hour, or until potatoes are tender and golden.

Tip: Baked tomatoes are a tasty garnish for grilled meats. Cut ripe tomatoes in half, dot with butter, then sprinkle with grated Parmesan cheese and oregano. Bake at 425 degrees for 10 to 15 minutes.
