Grill 2 extra chicken breasts. Save for Meal 4, Ginger-Sesame Chicken Chopped Salad.

Double the Coconut rice recipe. Save 2 cups of leftover rice to use in the Mango Coconut Rice Pudding for Meal 4.

Save leftover bread sticks for Meal 4.

Cook the fish on the grill along with the corn for today’s Black Bean and Corn Salad.

Use leftover chicken from Meal 1, cut into strips or cubes. No marinade time here - just toss the salad together, add the dressing and it is ready to eat.

Use the leftover coconut rice from Meal 1. Use one cup of milk and omit the other cup of coconut milk. Continue as directed. Will thicken in about half the time.

Serve leftover bread sticks with this meal. Wrap in foil and heat in 350 degree oven for 10 minutes or until warmed.
