This “Zipper-Skin” Fruit Works Dessert Magic!

One fruit that’s in season through the winter is mandarin oranges (around here they’re called Little Cuties®). I’ve noticed that while they’re delicious eaten out-of-hand, they don’t get a lot of attention dessert-wise.

This is a shame, because they’re such a nutritious fruit. And they’re a low-calorie fruit as well. Just look at all of their key health benefits:

But then there’s how fun they are to eat. Don’t you love their “zipper skin?” Since they’re so quick and easy to unpeel, I like to remove the skins of several at a time (maybe 10 or 12) and keep the segments in a refrigerator container. This practice not only accommodates easy snacking it makes for easy desserting.

Easy desserting? Yes! One of our favorite desserts featuring mandarin oranges is a quick trifle I make when I’m making a yellow or white cake. Pound cakes work really well for this dessert, also. I’ll close with the recipe. I first found it on the Eagle Brand website. It’s yummy, pretty, and so easy to make. See what you think:

Creamy Mandarin Orange Trifle


Ingredients:

1 (14-ounce) can Eagle Brand sweetened condensed milk
1 1/2 cups cold water
1 4-serving size package instant vanilla pudding
2 cups heavy cream whipped
1 (16-ounce) loaf pound cake cut into cubes
4 or 5 cups fresh seedless mandarin orange segments divided (count out 24 segments for finishing)
1/2 cup orange juice
2 cups raspberries divided

Directions:
COMBINE sweetened condensed milk and water in large bowl. Add pudding mix; mix well. Chill until thickened, about 20 minutes. Fold in whipped cream.

LINE bottom and sides of 12-cup round glass bowl with one third of cake cubes.

Spoon one third of reserved juice over cake cubes. Spoon one third of pudding mixture over cake; top with one half of the orange segments and one third of the raspberries.

Repeat layering. Just before final pudding layer, arrange reserved orange segments around edge of bowl. Top with remaining pudding and raspberries.

COVER; chill 3 to 4 hours
