Double the chicken in the recipe. After cooled, discard skin and cut into strips. Save for Chicken Philly Cheesesteaks on Day 4.
While you are working with the ground beef for the Taco Salad, go ahead and make the meat loaves for Day 5 meal. If your ground beef is frozen, remove 2 pounds to thaw. Use 1 pound for the Taco Salad as directed. For the Meat Loaves, mix the first 6 ingredients together, then form the meatloaves as directed. Put in a 9 x 13 pan, cover, and refrigerate until Day 5. You will only need to make the sauce and cook them.
Sort, rinse and soak the black-eyed peas in preparation for tomorrow’s beans.
Pull out the meatloaves you prepared on Day 2. Add the sauce and bake.
