European Style Mashed Potatoes (Patates Puresi)

Serves: 4

Double or triple the mashed potato recipe. Save 2 cups to use on Day 4, Czech Potato Dumplings and any other leftover to use in the Bubble and Squeak.

Ingredients:

1 pound (450-500 gr) potato, peeled
2/3 cup milk
1 egg, beaten
1/4 stick (35-40 gr) butter
1 teaspoon salt
black pepper (optional)
fresh parsley for garnish

Directions:

Peel the potatoes and cut them in half. Put them in a pot and cover up the potatoes with water. Add salt and boil till they are cooked (about 20 minutes). Mix the milk and beaten egg together. Put the boiled potatoes in a bowl immediately when they are hot. Mash the potatoes with a blender and meanwhile add the milk and the egg mixture while blending (so the egg doesn't cook). Mash them until the mixture is smooth.
Then, in a pot, put the butter and mashed potatoes. Cook by stirring continuously on a low-medium heat for about 4-5 minutes. You can adjust the salt as you like. Before serving you can sprinkle some black pepper and garnish with fresh parsley.
This is a nice side item to go with meat and fish dishes.
