Cream Sauce


Serves: 5

Yield: 2 cups

Ingredients

2 tablespoons minced fresh parsley
1 1/2 cups heavy cream
1/2 teaspoon dried basil
1/2 teaspoon dried tarragon
1/2 teaspoon cinnamon (optional)
1/2 cup shredded Parmesan cheese

Directions:

1. Mince the parsley and place in a medium pot.
2. Add the remaining ingredients to the pot, stir, and place over low heat. Simmer while gently stirring for 5 minutes, or until the cheese melts and the sauce is somewhat smooth and thick. Do not boil the sauce.

Important tip
Do not leave a cream sauce unattended. It takes very little time to heat the sauce, and if it is left to boil, it will be ruined.

Recommended with:
Ravioli and other filled pastas; Fettuccine and linguini; Bowties and shells.
