Soba with Stir-Fried Asparagus and Snow Peas

Ingredients

1 tablespoon sesame oil
2 tablespoons mirin
2 tablespoons tamari sauce
3 cloves garlic thickly sliced
1 1/2 cups julienned carrots
2 cups asparagus spears cut into 1 inch diagonals
1 1/4 cups snow peas cut into 1 inch diagonals
1 1/2 cups thinly sliced seitan
3 cups cooked soba noodles

Directions:

1. Heat a wok over medium-high heat. Add the oil, mirin, tamari, garlic, and carrots. Stir-fry for 5 minutes, or until the carrots are bright orange and the garlic is fragrant.

2. Add the asparagus and snow peas, and stir-fry 2 minutes, or until they become bright green. Toss in the seitan and cook 2 minutes, or until slightly browned.

3. Add the noodles and mix well to combine with the vegetables. Adjust the seasonings, if desired.

4. Mound onto plates and serve hot.
