Moroccan-Style Carrots and Yams

Ingredients

5 cups carrots cut in chunks
5 cups yams cut in chunks
2 cups onions cut in chunks
1 1/2 cups pitted prunes
3/4 cup honey
7 tablespoons extra virgin olive oil
2 teaspoons cinnamon
1 teaspoon black pepper
1 teaspoon ground ginger
1 teaspoon sea salt

Directions:

1. Preheat the oven to 400°F. Place all the ingredients in a large bowl and mix well. Transfer to a large covered baking dish.

2. Bake for 1 hour, or until the carrots and yams are tender. Adjust the seasonings, if desired.

3. Serve immediately.
