Mediterranean Lamb Burgers

Ingredients

FOR THE SEASONING:
2 tablespoons finely chopped Kalamata olives
2 tablespoons finely chopped fresh Italian parsley
2 teaspoons Dijon style mustard
2 teaspoons dried rosemary, crushed
1 teaspoon minced garlic
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

1 1/4 pounds ground lamb
4 hamburger buns

Directions:

TO MAKE THE SEASONING: In a large bowl combine the seasoning ingredients with 2 tablespoons cold water.

Add the lamb and gently mix with the seasoning. Gently shape the meat into eight patties, about 3/4 inch thick each don't overwork the meat.

Grill the patties over Direct Medium heat until the lamb is medium, 7 to 9 minutes, turning once halfway through grilling time. Grill the buns over Direct Medium heat until toasted, about 30 seconds. Serve the lamb hot on the toasted buns.
