Barbecued Cabbage

Ingredients

FOR THE SEASONING MIX:
1 teaspoon kosher salt
1/2 teaspoon onion powder
1/2 teaspoon celery seeds
1/4 teaspoon freshly ground black pepper

1 medium whole green cabbage, about 2 pounds
4 tablespoons unsalted butter
1/2 cup barbecue sauce

Directions:

TO MAKE THE SEASONING MIX: In a small bowl combine the seasoning mix ingredients.

Using a sharp knife, remove the core of the cabbage, leaving a cavity about 3 inches deep. Gently pry the cabbage leaves open with your fingertips. Spread the butter in the cavity and between the leaves, and season inside and out with the seasoning mix. Wrap the cabbage in heavy-duty aluminum foil so that all but the cavity end is covered.

Grill the cabbage, cavity end facing up, over Indirect Medium heat until the leaves are tender, 2 to 2 1/2 hours, basting occasionally with the barbecue sauce to prevent the exposed leaves from drying out. Set aside until cool enough to handle. Remove the foil. Cut into wedges and serve warm.
