Mexican Pizzas

Serves: 4

4 medium flour tortillas (7 to 8 inch diameter)
2 cups grated Cheddar cheese
salt and pepper
1 (4-ounce) can diced green chili drained
1 (6-ounce) can sliced black olives drained
1/2 cup salsa


Turn toaster oven to toast on darkest setting.

One at a time, place tortillas directly on wire rack in oven and toast until lightly browned on both sides, about 3 minutes each.

Turn toaster oven to broil at 450 degrees.

Place a crisp tortilla on an 8 x 11-inch baking sheet and sprinkle on a little of all of the remaining ingredients in the order listed above. Broil until cheese is melted and bubbly, about 5 minutes, watching closely so as not to burn. Repeat with remaining tortillas. Serve in wedges. Makes 4 servings.
