Crusty Fish Fillets

Ingredients

1/2 cup sour cream
1 tablespoon Dijon style mustard
1 cup panko or bread crumbs
1/2 cup finely grated Parmesan cheese
2 tablespoons minced flat leaf parsley
4 white fish fillets (1 inch thick each)

Directions:

Turn toaster oven to convection bake at 400 degrees (or bake at 425 degrees).

Mix sour cream and mustard together. Mix together the panko or breadcrumbs, Parmesan, and parsley, and then spread on a small plate. Coat fish in sour cream mixture and then press both sides of coated fish into crumb mixture. Place a wire rack on an 8 x 11-inch baking sheet and spray with nonstick cooking spray. Place fish on wire rack. Bake 20–22 minutes, or until cooked through and lightly browned. Makes 4 servings.
