Mango Salsa

2 tablespoons sugarcane juice or 1 1/2 tablespoons honey or palm sugar
1/4 cup Thai fish sauce
1/4 cup fresh lime juice
1/2 teaspoon roasted chili paste
6 ounces green mangos peeled, seeded, and diced (1 1/2 cups)
1/3 cup diced, seeded tomato
3 tablespoons diced scallion
2 tablespoons thinly sliced shallots
2 tablespoons finely chopped cilantro
2 tablespoons thinly sliced fresh lemon grass
1 teaspoon finely chopped garlic
1 teaspoon finely chopped serrano chile
4 sprigs cilantro (garnish)


Combine sugarcane juice, fish sauce, lime juice, and chili paste in a large bowl and whisk until well blended. Add all remaining ingredients except cilantro garnsih and toss until completely coated. Transfer to a serving bowl and garnish with cilantro.
