Combine bok choy and onions in a large bowl; set aside. Melt butter in a large skillet over medium heat; add noodles, sesame seed and almonds. Sauté until golden; remove to a paper towel. Mix together ramen seasoning packets and remaining ingredients. Add noodle mixture to bok choy mixture; mix well. Whisk together oil, sugar, vinegar and soy sauce until sugar has dissolved. Drizzle over salad; gently toss to coat.
