In a large bowl, mix all of the liquid ingredients (except zucchini) together and then gradually add the dry. Add in the zucchini and nuts. Mix all ingredients until well blended. Pour into lightly greased and floured pans. This recipe is supposed to make 2 loaves but I find there is not quite enough batter for two. I usually do one standard size loaf pan and one small loaf pan. Bake at 350° for 50-60 minutes. Loaves are done when the center bounces back.
