No Bake Pumpkin Pie

1 1/2 cups crumbs
1/3 cup melted butter
1 tablespoon agave
2 cups pumpkins
1 packet Kosher gelatin
3/4 cup agave
2 eggs
1 1/2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
3/4 cup almond milk


Grind graham crackers into crumbs in your blender or food processor. Melt butter, mix in agave, then pour it into the crumbs. Mix until all the crumbs are wet. Press them down into a 9 inch pie plate. This is a no bake crust however I like to bake mine @ 350° for about 8 minutes to set it in place so that it’s not too crumbly when cut and served. PUMPKIN PIE FILLING: Combine all ingredients in a heavy sauce pan stirring to a boil. Continue stirring over medium heat until thickened. Pour into the pie crust, let cool before refrigerating. Let it set for 4 hours – will thicken more upon setting. Delicious!!
