Combine all dry ingredients in a large bowl and gradually add the liquid. Add shredded zucchini and nuts last (as well as optional chocolate chips). This recipe makes one very large loaf or two smaller ones. (I prefer one big one) Pour the batter into one nonstick (or two) pan (s). Bake at 350° for 50-60 minutes. The bread is ready when the center bounces back when touched.
