Carrot and Raisin Stuffing

Ingredients

6 cups cornbread stuffing mix
3 cups applesauce
1 cup chopped carrot
1 cup dark raisins
1 cup canned crushed pineapple (preferably packed in natural juices) undrained
1/2 cup apple juice
1/2 cup water

Directions:

1. Preheat the oven to 325°F. Coat a 2 1/2- to 3-quart casserole dish with nonstick cooking spray and set aside.

2. Combine all of the ingredients, except for the apple juice and water, in a large bowl. Stir in the apple juice and water.

3. Transfer the stuffing to the prepared dish, cover, and bake for 30 to 40 minutes, or until heated through. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
