Tabouli Muffins

1/2 cup chopped fresh mint leaves
1/2 cup chopped green onion
1/4 cup chopped fresh parsley
2 cloves garlic chopped
1/4 cup lemon juice
2 tablespoons olive oil
2 tablespoons liquid sweetener
2 tablespoons soy sauce
1 cup water
1 cup cooked bulgur wheat
3 cups unbleached flour
1 teaspoon baking powder
1 teaspoon baking soda


Preheat the oven to 350°F.

In a blender, combine the mint, green onions, parsley, garlic, lemon juice, oil, liquid sweetener, soy sauce, and water, and pour into a mixing bowl.

Add the bulgur and mix well.

Sift the flour, baking powder, and baking soda into the bowl of blended liquid and bulgur. Mix well and spoon into muffin tins. These muffins are large, so you need to fill the cups nearly full. Bake for 18 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
