Snow Peak Lemon Squares

2 1/2 cups graham cracker crumbs
1 stick butter or margarine, softened
1 1/4 cups sugar, divided
1 (3-ounce) package lemon jello
1 cup boiling water
1 (8-ounce) package cream cheese, softened
1 (12-ounce) can evaporated milk, chilled overnight
2 tablespoons lemon juice
1/2 pint whipping cream, whipped with a little sugar


Mix cracker crumbs, butter, and 1/2 cup sugar (reserve 1/2 cup mixture to sprinkle on top), and press into a 9x13-inch dish. Dissolve Jell-O in boiling water and mix gradually with cream cheese. Whip chilled evaporated milk, and add remaining 3/4 cup sugar and lemon juice. Fold into Jell-O mixture. Pour into crust and chill until set. Top with remaining crumbs and whipped cream. Garnish with a twist of lemon.
