Rhubarb Cheesecake Pie

3 cups chopped rhubarb, cut into 1/2-inch pieces
1/2 cup sugar
1 tablespoon all-purpose flour
1 (9-inch) unbaked pie shell

Cheese Topping:
2 eggs
1 cup sugar
1 (8-ounce) package cream cheese, softened


Toss rhubarb with 1/2 cup sugar and flour. Add to pie shell. Bake in preheated 425° oven for 15–20 minutes.

For Cheese Topping:
Beat eggs with sugar and cream cheese until smooth. Pour over rhubarb. Reduce heat to 350° and continue baking for 30 minutes. Cool before serving.
