1 1/4 cups sugar
3 eggs
3/4 stick margarine, melted
1/2 cup buttermilk
1 teaspoon vanilla extract
1 cup flaked coconut
1 (9-inch) unbaked pie shell

Mix together sugar, eggs, margarine, buttermilk, vanilla, and coconut, and pour in unbaked pie shell. Bake at 350° for 25–30 minutes or until it shakes done.

Editor’s Extra: In any custard pie such as this, prevent a soggy crust by brushing the uncooked shell with a slightly beaten egg white, then bake at 425° for about 10 minutes. Fill, and bake according to recipe.
