Grandma Ashcraft's Mustard Potato Salad


Serves: 8

Ingredients

5 to 6 large russet potatoes, peeled and cubed*
1 cup miracle whip
1/4 cup evaporated milk
1 teaspoon vinegar
1 teaspoon salt
1 tablespoon mustard
1/4 cup dried minced onion

Directions:

Boil potatoes until tender. Remove from heat and drain. Allow potatoes to cool to room temperature.

In a large bowl, mix MiracleWhip, milk, vinegar, salt, mustard, and onion together. Fold potatoes into mixture. Chill and serve. Makes 8 servings.

VARIATION: Add hard-boiled eggs, olives, pickles, or radishes.

*Approximately 21/2 pounds of potatoes.
