Chilled Mashed Potato Salad

Serves: 4

4 to 4 1/2 cups mashed potatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup sweet pickle relish
3 eggs
1/3 cup chopped onion
1/2 cup miracle whip


In a saucepan, completely cover eggs with cold water. Bring to a boil over high heat 10–12 minutes. Drain, then run cold water over eggs until cooled. Peel hard-boiled eggs, then dice.

In large bowl, combine all ingredients and mix together. Chill at least 3 hours. Makes 4–6 servings.
