Peanut Butter Topping

Yield: 1 1/2 cups


1 cup brown sugar
1/2 cup water
1/2 cup peanut butter
chopped peanut (optional)


In a small saucepan, combine sugar and water over high heat. Stir constantly and boil for about 2 minutes, until sugar is no longer grainy. Remove from heat and beat in peanut butter until smooth, about 2 minutes. Serve poured over ice cream or frozen treats with a sprinkling of peanuts, if desired.
