Spinach Soufflé

Ingredients

2 1/2 cups cooked spinach, drained
1/4 cup butter or margarine
3 tablespoons onions, chopped
1/4 cup flour
1 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon pepper
1 1/2 cups milk
3 egg yolk
2 tablespoons lemon juice

Directions:

Chop spinach very fine set aside. Melt butter in saucepan add onion and cook until tender. Add flour, salt, nutmeg, and pepper mix well. Add milk cook until thick, stirring constantly. Beat egg yolks. Add a small amount of hot mixture to egg yolks then add all to hot mixture. Add spinach and lemon juice pour into buttered soufflé dish, set in pan of hot water. Bake at 375°F for 35 to 40 minutes. Serve with Cheese Sauce.
