Brie-with-Brandy Muffins

Ingredients

DRY INGREDIENTS
2 cups whole wheat pastry flour
1/2 cup unbleached flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
WET INGREDIENTS
8 ounces brie cheese
1 1/4 cups milk
1/4 cup canola oil
1 large egg
2 teaspoons brandy extract
GOODIES
1 cup slivered almonds
1 cup golden raisins
1/4 cup light brown sugar
TOPPING
1/2 cup slivered almonds

Directions:

1. Preheat the oven to 400°F.

2. Sift the dry ingredients together in a large bowl.

3. Place the Brie and milk in a saucepan over medium heat, and stir until the Brie is melted. Transfer to a medium bowl along with the remaining wet ingredients and whisk together. Add the goodies and stir to combine.

4. Pour the wet mixture into the dry ingredients. Stir just until mixed. Do not overstir.

5. Spoon the batter into a greased or papered muffin tin. Fill each cup nearly to the top.

6. Top each cup of batter with a large pinch of slivered almonds, taking care to sprinkle them evenly over each cup.

7. Bake for 15 to 20 minutes.
8. Cool the muffins at least 10 minutes before removing from the tin.
