Dante Blue’s Alfredo Blue

Serves: 8

16 ounces fettuccini pasta
3 garlic cloves, diced
1 tablespoon olive oil
6 ounces Stiltson blue cheese, crumbled
1/4 cup grated Parmesan cheese
2 cups heavy cream
1 1/2 cups crabmeat, picked over
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 salt and black pepper to taste


Cook pasta in boiling water until al dente. Drain and keep hot. Sauté garlic in oil until golden. Reserve garlic and oil. In saucepan over medium heat, combine blue cheese, Parmesan cheese, and cream. Stir until cheeses are melted. Add crabmeat and heat through, about 2–3 minutes. Do not overcook crabmeat. Stir in reserved garlic and olive oil. Season with basil, oregano, salt and pepper. Toss sauce with hot pasta and let stand 5 minutes before serving.

Chef’s Note: If you cannot find Stiltson blue cheese, be careful to substitute only high quality blue cheese such as Midnight Blue brand blue cheese from Finlandia. Avoid using creamy blue cheese, as the sauce will turn out relatively bland. Do NOT substitute imitation crab for real crabmeat.
