Yield: 48 cookies

2 cups chopped pecans
2 eggs, beaten
1 1/2 cups brown sugar
pinch of salt
1 teaspoon vanilla extract
2 tablespoons melted butter
2 (3-ounce) packages cream cheese, softened
2 sticks butter or margarine, softened
2 cups all-purpose flour
powdered sugar (optional)

Combine all ingredients thoroughly. Set aside.

Combine cream cheese and butter; gradually add flour, mixing with hands. Divide dough into 4 equal parts. Each quarter of the dough will be enough for 12 mini-muffin cups. Divide each quarter into 12 balls and place one ball in each mini-muffin cup. Press with thumb or finger into bottom and around sides to form cup. Fill each with 1 teaspoon nut Filling. Bake at 350° for 15–20 minutes. When cool, you may sprinkle with powdered sugar, if desired. Makes 48 cookies that melt in your mouth. They keep well.
