The turkey is Mexico's indigenous bird, but chickens were brought to Mexico during colonization in the 1500s, and today chicken is the preferred poultry in Mexican cooking. However, turkey is still widely used for celebration and holiday dishes when it's served with traditional moles, and in other regional specialties, such as Yucatán Stuffed Turkey in White Sauce. Wild ducks, quail, and other game birds have also been eaten in Mexico for centuries, and hunting game birds is still practiced in some areas during hunting seasons. Domesticated ducks and quail are eaten in contemporary cooking, but are mainly found on restaurant menus.

Poultry is most often served with classic sauces, such as Chicken in Oaxacan Red Mole. Moles are sauces with a heritage dating back to the Aztecs, which can be described but never truly appreciated until tasted. One of the most delicious and well-known moles is a "newer" one--Mole Sauce from Puebla (Mole Poblano), see Salsas, Sauces, and Condiments--which was developed after Mexico came under Spanish rule in the 1500s. The rich, complex-flavored sauces are made with a variety of ingredients including chiles (which often reflect the color in the name), garlic, herbs, spices, and sometimes chocolate. Although now moles are served with a variety of foods, they pair best with poultry.

Chicken is particularly favored for simpler dishes, in which it is grilled, sautéed, or baked, and served with a variety of sauces or accompaniments. It's a natural for tacos and quesadillas, and main dishes with basic sauces including Lime Chicken, Sautéed Chicken with Chipotle Chile Sauce, and Chicken in Roasted Tomato Sauce.

The current trend in Mexico toward innovative dishes--combining the old and the new--is producing inspiring recipes such as Chicken and Corn with Fiery Cilantro-Mint Sauce, Duck Breasts with Poblano Chiles, and Quail with White Beans.
