Surprise Pumpkin Pie

2 eggs or 4 egg whites or 1/2 cup egg substitute
3/4 cup sugar
1/2 cup Reduced-Fat Bisquick®
1 (15-ounce) can pumpkin
2 teaspoons pumpkin pie spice ( or 1 t cinnamon, 1/2 t ginger, 1/4 t cloves, and 1/4 t nutmeg)
1/4 teaspoon salt
1 (13-ounce) can evaporated milk


1. Preheat the oven to 350°. Coat a 9" pie plate (preferably glass) with cooking spray.
2. Process all ingredients together in a blender or food processor for 2 minutes. Pour batter into prepared pie plate.
3. Bake 50 to 60 minutes, or until firm. Cool completely before cutting. Serve with fat-free ice cream or yogurt, if desired.
