1. 3 or more hours before serving: Slice the tofu into small bite size chunks, or into 1/8" “lunchmeat” slices for sandwiches. Place in a glass baking dish.
2. In a small bowl, mix the soy or tamari sauce with the seasoning. Pour over tofu, making sure to coat evenly. Marinate the tofu in the refrigerator, covered, for 2 or more hours.
3. 45 minutes before serving: Coat a nonstick baking sheet with cooking spray. When marinating time is almost up, heat oven to 425º. Place the tofu on the baking sheet. Bake 30 minutes. Tofu should become slightly browned.
4. Line platter with red tipped lettuce leaves and layer on the chunks. Stab chunks with toothpicks and serve hot or cold.
Note: This simple marinade works great with chicken too.
