Buttermilk Pie

Ingredients

4 eggs
1 1/2 cups sugar
2 tablespoons flour
1 teaspoon mexican vanilla extract
1 cup buttermilk
1/2 cup butter
1 pinch salt
1 cup pie filling or fresh berries
2 cups whipped cream
CRUST:
1/3 cup vegetable shortening
1 tablespoon vegetable shortening
1 cup flour
1/4 teaspoon salt
2 tablespoons (maybe 3) water cold

Directions:

Prepare pie crust. Mix eggs well, then add sugar, flour, vanilla, buttermilk, butter, and salt and mix well. Pour buttermilk mixture in the uncooked pie shell. Bake at 400°F for 10 minutes then turn oven down to 350°F for another 50-60 minutes. (Bake until only the very middle giggles a little.) Top with berries and cool whip if desired.

CRUST: Cut in shortening with fork until crumbs are coarse. Add cold water until crumbs form a ball. Then press crust into a pie pan.
