1 Scrub the potatoes with a brush under cold running water. Peel them if desired. Cut the potatoes into halves or quarters if large. In a large skillet, melt the butter with the oil over medium heat. Add the onion and cook until softened, about 5 minutes.
2 Add the potatoes and salt and pepper to taste. Cover the pan and cook, stirring occasionally, about 20 minutes, or until the potatoes are tender.
3 Add the parsley and stir well. Serve hot.
