1 Soak the mushrooms in the water for 30 minutes. Remove the mushrooms and reserve the liquid. Rinse the mushrooms under cold running water to remove any grit, paying special attention to the ends of the stems where soil collects. Chop the mushrooms coarsely. Pour the mushroom liquid through a paper coffee filter-lined strainer into a bowl.
2 In a medium skillet, heat the oil over medium heat. Cook the sausages until browned on all sides, about 10 minutes. Add the onion and garlic and cook 5 minutes more.
3 Stir in the mushrooms and tomato paste. Add the mushroom liquid and salt and pepper to taste. Bring to a simmer. Cook over low heat, stirring occasionally, until the sauce is thick, about 20 minutes. Serve hot.
