Roasted Sausages and Potatoes


Serves: 4

Ingredients

4 medium all-purpose potatoes, peeled and cut into wedges
1 medium onion, halved and thinly sliced
4 tablespoons olive oil
salt and freshly ground black pepper
1 pound sweet or hot Italian-style sausage, cut into 2 or 3 chunks

Directions:

1 Place a rack in the center of the oven. Preheat the oven to 450°F.

2 In a roasting pan large enough to hold all of the ingredients without crowding, toss the potatoes with the onion, olive oil, and salt and pepper to taste.

3 Bake 30 minutes. Remove the pan from the oven. Turn the potatoes and onions. Tuck the sausage pieces among the vegetables. Return the pan to the oven and bake 20 to 30 minutes more, or until the sausages are browned and the potatoes are tender. Serve hot.
