1 Place a rack in the center of the oven. Preheat the oven to 375°F. Oil a baking dish large enough to hold the tomatoes in a single layer.
2 Rinse the tomatoes and pat dry. Cut the tomatoes in half lengthwise. Scoop out the tomato seeds. Place the tomato halves cut-sides up in the pan. Drizzle with the oil and vinegar and sprinkle with salt and pepper.
3 Bake the tomatoes 45 minutes or until tender. Serve at room temperature.
