1 Trim off the outer leaves of the cabbage. With a large heavy chef's knife, cut the cabbage into quarters. Cut out the core. Cut the cabbage into bite-size pieces.
2 In a large pot, cook the garlic and red pepper in the olive oil over medium-low heat until the garlic is golden, about 2 minutes.
3 Add the cabbage and salt. Stir well. Cover and cook, stirring often, for 20 minutes, or until the cabbage is lightly browned and tender. Add a little water if the cabbage begins to stick. Serve hot.
