1 In a large saucepan, cook the onion in the oil over medium heat until tender, about 10 minutes. Stir in the garlic and parsley.
2 Place the artichokes in the pan and stir well. Add the water and salt and pepper to taste. Cover and cook over low heat until the artichokes are tender when pierced with a knife, about 15 minutes. Serve warm or at room temperature.
VARIATION: In Step 2, add 3 medium potatoes, peeled and cut into 1-inch cubes, with the onion.
