Spinach Lasagna Casserole

Ingredients

3/4 cup onion (chopped)
1 teaspoon crushed garlic
2 tablespoons olive oil
48 ounces spaghetti sauce
16 ounces cottage cheese
1 (12-ounce) package frozen chopped spinach (thawed & drained)
1 pound mozzarella cheese (shredded)
1/2 cup Parmesan cheese (grated)
2 eggs (slightly beaten)
1 pound lasagna noodles

Directions:

Cook lasagna noodles according to package directions. Drain and set aside.

In large skillet add olive oil, add onion and garlic and cook over medium heat until tender, about 5 minutes, stirring occasionally. Add spaghetti sauce; simmer together about 15 minutes. Turn off heat.

In large bowl mix cottage cheese, thawed and drained spinach, 1/2 cup mozzarella cheese, Parmesan cheese and slightly beaten eggs.

Grease a 9 x 13 inch pan; layer 1/2 of lasagna noodles on the bottom; 2 cups of spaghetti sauce; 1/2 of lasagna noodles on top of sauce. Place all of the cottage cheese and spinach mixture on top of the noodles. Spread 1 cup shredded mozzarella cheese on top of noodles. Spoon remaining sauce on top of cheese.

Bake covered at 350 degrees. Bake for 45 minutes. Uncover and top with remaining mozzarella cheese; bake another 15 minutes.
