Crackers & Vegetable Casserole

1 cup carrot (peeled, cooked and mashed)
1 (10-ounce) package frozen chopped broccoli (thawed and drained)
1 (10-ounce) package frozen whole corn (thawed and drained)
1 cup milk
1 cup cracker crumbs
1/2 cup Cheddar cheese (shredded)
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper
4 eggs
1/4 cup onion (chopped)
1/3 cup butter (softened)


Combine mashed carrots, broccoli, corn, milk, cracker crumbs, Cheddar cheese, onion, salt, pepper, cayenne pepper and softened butter in large bowl.

Beat eggs well. Pour into carrot mixture and mix together until combined.

Grease a 9 x 13 inch pan. Bake at 350 degrees for 30 to 40 minutes or until knife inserted near the center comes out clean.
