Broccoli & Egg Casserole

6 tablespoons butter
4 cups broccoli (trimmed and chopped)
1/2 cup onion (chopped)
6 eggs
1 cup Cheddar cheese (shredded)
1 cup half and half
1/2 teaspoon sea salt
1/8 teaspoon white pepper


In large skillet add butter and melt over medium heat, add onion and broccoli, cook together for about 5 - 7 minutes, stirring occasionally. Turn off and set aside.

In large bowl add eggs, beat well; add half & half, Cheddar cheese, salt and white pepper.

Mix well together. Add onion and broccoli; mix together until blended.

Grease a 9 x 13 inch pan. Pour in mixture.

Bake at 350 degrees for 45 minutes or until knife inserted in middle comes out clean. Let stand about 10 minutes before serving.
