Toasted Coconut

Serves: 2


1/2 sweetened shredded coconut
1/4 teaspoon coarse sea salt or kosher salt


Spread the coconut on a microwave-safe plate large enough to hold it in a layer no thicker than 1/4 inch. Cook at full power for 45 seconds. Toss with a fork and microwave in 20-second intervals until the coconut is spotted with brown, stirring occasionally. Toss with the salt.
