Slow-Poached Salmon In Garlic Oil And Herbs

2 to 2 1/2 pounds salmon fillet, skin and pin bones removed
1/3 cup garlic-flavored oil
1/4 cup chopped fresh herbs, parsley, dill, chives, thyme, tarragon, or a combination
kosher salt and coarsely ground black pepper to taste
1 lemon, juiced


Heat the oven to 250°F. Place the fish in a baking dish large enough to hold it snugly. Pour the oil over the top and lift the sides of the fish so some oil runs underneath. Sprinkle the herbs over the top and season liberally with salt and pepper. Cover the dish with foil and bake until the salmon barely flakes to gentle pressure, 50 minutes to 1 hour. Do not uncover for at least 45 minutes while baking.

Uncover and drizzle with lemon juice serve with some of the cooking juices spooned over the top.
